靶向蛋白质组学技术在多物种奶及其奶制品鉴别中的应用研究

摘要: 基于靶向蛋白质组学技术,采用超高效液相色谱-串联高分辨质谱/串联三重四极杆质谱,建立了一种鉴别奶牛、水牛、牦牛、山羊、绵羊、马、驴和骆驼共8个物种奶的分析方法。针对8个物种奶中6种乳蛋白酶解产生的特征多肽进行分析,利用同位素内标法实现多条多肽的同时检测及比较,通过理论多肽分析、实际多肽检测、干扰考察、线性与最大酶解时间比较,最终筛选出13条特征多肽。依据13条特征多肽对模拟混合奶样品中的不同物种奶进行分析,对市售16个奶制品中的奶源物种进行鉴别。结果表明,特征多肽在奶源物种鉴别中具有良好的稳定性与特异性,本方法对多物种奶制品行业的质量控制与监管具有参考价值。
